Tequila Honey Bee

Agave and honey come from the same landscape. In the glass they behave like they already know each other.

The build

  • 60 ml blanco tequila
  • 22 ml fresh lime juice
  • 22 ml honey syrup, 3:1

Shake with ice. Strain over fresh ice into a rocks glass. Lime wheel.

Notes

Blanco, not reposado. Barrel time adds vanilla and oak that compete with the honey rather than supporting it. If you want the wood, pour a reposado and drop the syrup to 15 ml.

Lime, not lemon. Lemon pushes this toward a Bees Knees; lime keeps it in Mexico.

Long

Build in a highball over ice, top with soda. The honey holds up better than agave syrup does when diluted, which is the reason to use it.

Mesquite grows in the same dry country as agave, and the two share a register: dry sweetness, a vegetal edge, nothing floral or cloying about either.
