Mesquite honey: the rarest monofloral honey in Mexico
If the supermarket wildflower jar is your reference, mesquite honey is going to surprise you. It does not taste the same. It does not look the same. It is not produced the same way. It is another category.
What monofloral means
Most honey sold anywhere is wildflower: the bees visit dozens of species and the result is a generic sweetness. Monofloral honey comes from the nectar of a single plant species. In Fantina's case that species is mesquite, a tree native to the semi-arid regions of Mexico — the same tree that grows across west Texas and the American Southwest.
Why mesquite honey is different
- Flavor: soft, delicate, with a low sweetness that never cloys. If wildflower honey is an accordion, mesquite is a violin.
- Color: pale, from near-white to light amber, lighter than almost anything on a shelf.
- Texture: it crystallizes fast and fine, which leaves it spreadable, almost like butter. Not a flaw — the evidence it was never pasteurized.
- Origin: mesquite grows in arid country and holds through droughts where other species will not flower. Ours comes from a single territory in Jalisco.

And the vessel
Fantina does not sell honey in a glass jar. The mesquite honey travels inside a hexagonal ceramic vessel made and painted by hand in Santa María Canchesdá, in the State of Mexico. Every piece is numbered. When the 700 are gone, this edition will not be repeated.
