What single origin means here

Most coffee sold by weight is a blend, assembled from several countries so the taste stays the same all year. Single origin gives that up. The beans come from one region and one season in Oaxaca, so the cup moves with the harvest rather than being corrected back to a house profile.

Shade grown means the trees ripen under canopy rather than in open sun. It is slower, and the difference reaches the cup.

Coffee in Oaxaca

Oaxaca lies between Veracruz and Chiapas with the Pacific to the west, and its coffee grows between 900 and 1,650 metres. Most of what grows there descends from Typica, among it Pluma Hidalgo, a nineteenth-century offshoot planted by displaced Indigenous farmers in the mid-1800s, now the subject of a denomination of origin claim. Nine of every ten bags of Mexican coffee are washed.

It is the least industrialised of Mexico's coffee regions, and many growers there have declined to modernise. The cups lean toward caramel sweetness, yellow fruit, an orange acidity and a creamy body.

We do not print a farm, an altitude or a cupping score we have not verified for this season. When the lot is documented, the figures go here and not before.

Whole bean, and why

Coffee begins to lose its aromatics within minutes of grinding. We sell it whole for that reason and for no other. Grind what you are about to brew and nothing more.

Coarse for a French press, medium for a pour-over or drip, fine for espresso, and fine again for a clay pot.

In the glass

Brewed strong and cooled, it builds a Cafe de Olla Cocktail: reposado tequila, cold coffee, honey syrup, orange peel, cinnamon. Stirred, not shaken.

Hot, brewed with cinnamon in a clay pot and sweetened with honey instead of piloncillo: add the honey off the heat, once the pot stops steaming.

Keeping it

Sealed, at room temperature, away from light and heat. Not the refrigerator and not the freezer: coffee takes on the smell of whatever is next to it, and condensation on a cold bean does the rest.
