The Kitchen Tests for Pure Honey Do Not Work

Somebody will tell you to drop a spoonful into a glass of water. If it sinks in a lump, it is pure. If it clouds and dissolves, you have been sold syrup.
It is a satisfying little ritual and it tells you almost nothing.
Why the tests fail
Every one of the kitchen tests — the water glass, the thumb, the burning match, the paper towel — is really measuring one variable: how much water is in the honey. A thick honey passes. A naturally runnier one fails.
The trouble is that moisture content varies enormously by flower, by season, by how long the frames sat in the hive. A perfectly genuine raw honey from a humid harvest will fail every test on the list. And a competently made adulteration, cut with a syrup of similar viscosity, will pass all of them.
The tests reward thickness. Nobody was ever defrauded by thickness.
What actually detects it
Isotope ratio testing and nuclear magnetic resonance profiling. Both live in laboratories, both cost real money, and neither can be done at a kitchen counter with a glass of water. That is the honest answer, and it is why the folk tests survive: people want an answer they can perform themselves tonight.
The duller answer that works
Buy from someone who will tell you which flower, which region, and which year, and who will still be there next season to be asked about it. Adulteration is a supply chain problem, not a chemistry problem, and it is solved the same way — by shortening the chain until you can see the end of it.
What honesty looks like on a label
Ours says mesquite, from western Mexico, raw, unblended, from a single bloom, in an edition of seven hundred. It will crystallise unevenly after a few months, because raw honey does. That is not a defect and we would rather say so on the way in than explain it later.
